In a large bowl, mix the sliced zucchini and squash with the olive oil, garlic powder, onion powder, oregano and salt.
Place the coated zucchini and squash on a lined baking tray in a single layer and roast for 8 mins.
Remove the baking tray from the oven and sprinkle with shredded vegan parmesan and bake for another 7 mins or until cheese is melted. Serve hot and enjoy! YUM
