On a medium heat, add olive oil to a pan and allow to heat. Add onion and saute for 2 mins. Add the broccoli, cauliflower and spinach, and stir. Then add the stock.
Remove from heat and add to a blender. Blend until smooth. Serve into a bowl, season with salt and pepper to taste and serve hot. Enjoy
