Ingredients:

1 leek, chopped
1 onion, chopped
fresh ginger  30gm, grated
1 packet firm tofu, cut into lengths
500gm beans, ends trimmed
2 tablespoons tamari sauce
tablespoons hoisin sauce
tablespoons rice wine vinegar
1/2 cup cashews
peanut or sesame oil

Method: 

Heat oil in wok, add leek, onion & ginger.

If you feel like a little more zing sprinkle with any powdered spice like Chinese 5 Spice or a little chilli. 

Stir fry for two minutes. 

Add in the tofu, beans & nuts & stir fry for another minute. 

Mix sauces & rice wine vinegar together & add to pan & stir fry until mixed through. 

Serve! Excellent over rice.
