Christmas Crumble

Ingredients:
  • 4 cups of rhubarb plus your favourite berries (strawberries or blackberries or raspberries)
  • 2 oranges & grated rind of 1
  • 200gm chopped dates
  • 4 tablespoons of sugar (or sub sweetener of choice, such as maple syrup or coconut sugar)
  • 300gm-350gm of muesli 
  • 1/4 cup packed light brown sugar
  • 1 teaspoon of ground nutmeg
  • 1  teaspoon of ground cinnamon
  • 2 tablespoons of olive oil
Method:
  1. Preheat oven to 175 degrees celcius
  2. Use 1 tablespoon of the olive oil to grease your baking dish (20 x 20cm) & then warm the other tablespoon in a large pan
  3. Add fruit, dates, orange juice & rind, & spice directly to the pan and toss with the sugar, cook gently until it all softens & reduces
  4. Pour into your baking dish & cover with the muesli, sprinkle the brown sugar on top
  5. Bake for 20 minutes or so until the top is crisp and golden brown

This dish really does have a Christmassy sort of flavour!
