Vegetarian Chilli
Ingredients:
1 cup pumpkin, peeled & chopped
1 corn cob, kernels removed
1 red or green capsicum, finely chopped
1 zucchini, chopped
2 carrots, chopped
2 stalks celery, finely chopped
2 garlic cloves, crushed
1 onion chopped
1/4 to 1/2 red chilli, deseeded, chopped depending on how spicy you want it
2 sprigs coriander, chopped
2 tablespoons olive oil
1 1/2 teaspoons ground cumin
1 teaspoon smoked paprika
3 tomatoes, crushed
1 can kidney beans, rinsed, drained
125ml to 250ml vegetarian stock depending on preferred thickness
