Zucchini Fritters

Ingredients:

1/4 cup chia seeds or 1 or 2 eggs
1/2 cup soy/rice/oat milk
1/2 cup flour - chick-pea or spelt flour works well, but any kind is fine (easy to adapt to gluten free)
2 or 3 (about 500gm) zucchini
1 onion, chopped finely
2 carrots, grated
2 spring onions, thinly sliced
small bunch of parsley chopped
oil for frying
2 large potatoes, grated
1/2 teaspoon of curry powder
salt & pepper to taste
optional - a little sweet chilli sauce gives them a nice little kick!


    Method:

    In a large bowl mix the chia seeds with the oat milk - let stand for 15 minutes, drain off excess milk. If using eggs, no need for standing time. 

    Start grating & chopping!

    Mix all ingredients together really well.

    Heat oil in frying pan, place large flattened spoonfuls & cook for 2-3 minutes each side or until golden brown. Transfer each batch to a plate in the oven to be kept warm at a low temperature. 

    Great meal with salad & baked potatoes or chips.
