Ingredients: 

500gm sweet potato, cooked; Can be roasted, steamed or boiled.

1 cup rolled oats

1 cup kidney beans, cooked

1 onion diced 

3 celery stalks diced finely

1/2 cup sunflower seeds

1/2 bunch / 1/4 cup of parsley diced

1/2 teaspoon salt

1/4 teaspoon pepper

1 cup barbeque sauce

1/2 cup sweet chilli sauce

1 egg  or (vegan version) 1 tablespoon of chia seeds mixed with 3 tablespoons of water and let the mixture sit for 15 to 20 minutes.

Method:

In a blender place rolled oats & pulse until crumbly, add beans, sweet potato, sunflower seeds, parsley, egg or chia seeds, salt & pepper. 

Gently fry the onion & celery, mix the 1/2 the sauce and 1/2 the sweet chilli sauce, add to the mix in the blender & blend for a few seconds until all mixed & the beans & sunflower seeds have broken down a little. Don't over do it!

Place mixture into pan & flatten the top. 

Mix the remaining sweet chilli sauce & barbeque sauce and spread over the top.

Bake for 30 minutes, let stand for 5 minutes before serving.

A hearty meal great with mashed potatoes & peas.
