In a large pot, heat the oil and add diced onion and celery. Saute on low-med heat until onion is translucent
Add sliced carrot, diced potatoes, thyme, stock and black pepper. Stir, cover with a lid and bring to the boil. Reduce the heat to low and simmer for 15 mins
Add peas and pasta and cook for another 5 mins or until pasta and veg are soft. Season with salt and pepper and enjoy
