A super simple vegan broad bean recipe thats quick, healthy and flavourful.
Directions
Boil the broad beans in salted water for about 2-4 mins until tender. If they’re not peeled, cool and remove the skins.
Use a fork or potato masher to lightly crush the beans. You can keep some texture or make it smoother - your choice.
Mix in olive oil and lemon juice. Taste and adjust with more lemon or oil if needed.
Recipe Note
You might like to add some garlic or chilli flakes for heat, or even some mint or cumin to taste - enjoy!
