A super simple 3 ingredient recipe using red capsicum.
Directions
Preheat the oven to 200c.
Cut red capsicums in half, remove seeds. Place capsicums (skin side up) and unpeeled garlic cloves on a baking tray.
Roast for 25-30 mins, until capsicums are charred and soft.
Let the capsicum cool slightly, then peel off the skin. Peel the garlic cloves.
Blend roasted capsicum and garlic with olive oil until smooth.
Recipe Note
You might like to add a little flavour booster with some salt, smoked paprika or lemon juice.
