Super easy to make, this quick Pickled Cucumber recipe will satisfy the cravings and taste yummy in sandwiches, salads or nachos, whatever your desires.
250g Lebanese cucumbers, thinly sliced
½ cup white or apple cider vinegar
½ cup distilled water
2 tsp pink himalayan salt
2 tbsp white granulated sugar
To make your brine, mix together water, vinegar, salt and sugar and stir until all salt and sugar are entirely dissolved.
Place the sliced cucumbers, skin on, in a jar and press them to the bottom of the jar. Cover cucumbers fully with the brine.
Let cucumbers sit for at least 30 mins before eating.
Enjoy pickled cucumbers in sandwiches, salads, tacos, the list goes on......
