Wipe the mushrooms with a damp cloth and trim the stalks. Place the mushroom caps in a large bowl.
Combine the olive oil, vinegar, garlic, parsley, chilli, sugar, salt and pepper in a screw-lid jar and shake well.
Pour the marinade over the mushrooms and toss to combine. Cover and refrigerate for at least 1 hour. Toss mushrooms occasionally as they marinate. Serve mushrooms at room temperature. Enjoy
