Remove the thick, woody stalks and ribs from kale leaves and tear leaves into smaller pieces. Wash leaves thoroughly then use a salad spinner or clean kitchen towel/paper towels to dry them completely (if the kale leaves are not dried completely, they will steam instead of becoming crispy).
Toss leaves with olive oil, salt and pepper. Arrange kale in one layer, on a large baking sheet. Bake for 10-12 mins or until crisp. Ensure kale does not overcook/brown
Remove from oven and sprinkle with chili powder and lime. Let cool for 5 minutes. Enjoy!
Remember to dry kale as well as possible before baking for the crispiest chips.
