Toss kale with 1 tbsp of lime juice and ¼ tsp of salt. Using your hands, crunch between your fingers until kale becomes darker green and tender for about 1-2 mins.
Stir in avocado and grated carrot.
To make the dressing, whisk sesame oil with soy sauce, ginger, lime juice and grated garlic.
Add dressing to kale salad and toss to serve. Enjoy!
