A fresh healthy salad full of fiber and crunch.
200g Jerusalem Artichokes, cut into thin slices
Roquette
1 Orange, peeled and cut into segments
Walnuts, handful
For the dressing - 2 tbsp extra virgin olive oil
1 garlic clove, crushed
1 tsp cider vinegar
juice from 1 orange
½ tsp Dijon mustard
salt and freshly cracked black pepper
Peel the Jerusalem artichokes and slice thinly
Peel the orange and cut into small segments
For the dressing - mix the oil, vinegar, orange juice, mustard, and garlic together and stir. Season with salt and pepper to taste
In a serving bowl, mix the roquette, sliced Jerusalem artichokes and orange segments and sprinkle over the walnuts.
Dressing can either be served on the side or drizzled over the top - enjoy!
Jerusalem Artichokes are versatile and can be eaten raw, roasted, boiled, steamed or sauteed. YUM!
