Peel the onions and slice into fine rings. Heat the butter in a large pan, add the onions and cook over low heat for about 20 mins, or until tender. Add the sugar and flour and cook. stirring for about 2 mins until mixture is just starting to turn golden
Stir in stock and simmer, covered, over a low heat for about 1 hour. Season with salt and pepper
Preheat oven to 180 degrees. Cut bread stick into 1cm slices. Bake 20 mins, turning once, until slices are golden. Top each with some of the grated cheese and place under a hot grill until melted.
Serve soup topped with toasted cheese. Sprinkle with extra grated cheese and salt and pepper to taste - enjoy!
