A crunchy fresh Daikon Salad that your guests will love!
2 daikon, thinly sliced
3 tbsp avocado oil
2 tbsp clementine juice (orange juice is fine)
3 tbsp rice vinegar
1 granny smith apple, thinly sliced
3 tbsp fresh parsley, chopped
2 tbsp pepitas
1 tsp lime juice
In a bowl, add oil, vinegar, juices and parsley and whisk to blend
Add the thinly sliced Daikon and green apple and toss with the dressing. Allow to sit for 5 mins for the flavours to blend.
Sprinkle over the pepitas for some crunch and protein, yum
