2/3 cup vanilla vegan yogurt, plus extra for brushing the scones for baking
Directions
Preheat the oven to 200 degrees. In a large mixing bowl, add the banana (about 1 ⅓ cups) and mash with a fork. Add in yogurt and self raising flour and then stir. Flour your hands and knead and squeeze to form a dough.
Using your hands, lightly flour a board and place the dough on it. Sprinkle some more flour on the dough so the roller doesnt stick, and then roll and flatten into about 2cm thickness.
Use a cookie cutter to press down and cut out the scones from the dough mixture. Place the scones on a lined baking sheet leaving space in between each. Use a pastry brush to coat each scone with some yogurt.
Bake the scones in the oven for approx 15 mins or until the top is lightly golden brown. Remove from oven and cool on an oven rack. Enjoy!
Recipe Note
You might like to add some chocolate chips or some cinnamon, the choice is yours.
