Organic Fare - Girls Night In Soup

This root vegetable soup is warm and hearty, sure to satisfy and eager to please. Exactly what a girl (or boy) wants!

INGREDIENTS

1 onion – chopped

2 garlic cloves – crushed

250g carrots – diced

300g sweet potato - chopped into 2cm pieces

200ml coconut cream

1 small fresh chilli - finely chopped

30g fresh turmeric - grated

20g fresh ginger - grated

1 litre vegetable stock

bunch of radish with leaves - thinly sliced

METHOD

Heat your pan (hot hot hot) dry fry the  onion and after a few minutes when it's a little cooked add 1/4 cup of stock and stir well. Beautiful! 

Then add the ginger, garlic, chilli and turmeric cook for a few minutes until fragrant. Adding stock as you go.

Next add the carrot, sweet potato and the rest of the stock and bring to a soft boil.

Cover and simmer for 15- 20 minutes until carrot has cooked.

Once cooked add the coconut cream (save a little bit) then use a blender to puree the soup.

Serve into bowls with a swirl of coconut cream, add a radish/parsley garnish to each bowl along with a few finely chopped leaves.
