1 carrot - cut into slim batons
150gm of mushrooms - cut in half or thirds
1 orange - juice of
20gm ginger - grated
2 cloves garlic - crushed
1 lime - cut in half
1 lemon - cut into wedges
1 tablespoon oil - sesame is best or use water
2 tablespoons (30ml) soy or tamari sauce
Gently warm the soy sauce and orange juice along with lime juice in a small saucepan & add the tofu, let slowly warm while you do the stir fry.
Saute ginger, spring onion & carrot stirring for 2 minutes.
Add broccoli, snow peas, garlic & mushrooms then stir-fry for another minute.
Add tofu and sauce and serve with a wedge of lemon on the side.
