Organic Fare - Roasted Vegetables with Lemon and Garlic

Sweet garlic with the tartness of lemon brings flavour to simple roasted vegetables.

We'll deliver fresh to your door, all the ingredients as listed below along with the recipe so you can create this delicious meal at home. What could be better?! 

INGREDIENTS


* We provide

1/2 cauliflower – chopped into florets

1 bunch dutch carrots - chopped into 2cm rounds

1 zucchini - chopped into 1cm rounds

300gm broccoli - chopped into florets

5 garlic cloves – finely chopped

1 packet tofu - pressed with a paper towel and chopped into 2cm squares

1 lemon - juice of then quartered

sprig of rosemary - chopped

* You'll need

salt and pepper

50ml olive oil

METHOD

    Mix lemon juice, rosemary, garlic, oil, plenty of salt and pepper & pour over veggies, this mixture is best left covered and refrigerated for a few hours or overnight, but can be done all at once too. 

    Lay veggies out onto roasting tray, with the tofu and the lemon quarters and roast for 30 minutes.

    Serve!
