Organic Fare - Kale Minestrone

INGREDIENTS


* We provide

1 onion – chopped

3 garlic cloves – crushed

1 carrot – diced

1 parsnip - diced

small zucchini - chopped

200gm pumpkin - chopped into 2cm pieces

300gm tomatoes - finely chopped or blended

small bunch of kale - coarsely chopped

190gm jar tomato paste

400gm can cannelini beans

1 litre vegetable stock

METHOD

    Add a 1/4 cup of stock to a warm pan, when boiling gently add the onion and saute until onion has softened, about 3 minutes then add garlic and carrot and cook for a further 2 minutes. If it gets dry at any time, add a little water. 

    Next add the tomato paste and cook for another minute.

    Next add the rest of the stock along with 300ml of water and bring to a gentle boil.

    Add in the pumpkin, parsnip and zucchini.

    Then cover and simmer gently for about 20 minutes.

    Lastly add the beans and kale and continue to cook for another 5 minutes. 

    Serve!
