5 oranges try a mixture of oranges even pink grapefruit will work to add variety & colour
1 red onion
small bunch of parsley, chopped
handful of black olives
extra virgin olive oil - for drizzling


Layer the orange slices on a large platter, trying not to overlap too much.

Then slice the red onion into very fine rings, scattering them over the oranges along with the olives and parsley.

Season with a generous grinding of fresh black pepper, sprinkle with some coarse sea salt and drizzle with olive oil.

If you can wait, let the salad sit for a few minutes before serving, the citrus juices and olive oil will mingle into the perfect citrus marinade …
