2 or 3 ripe bananas

Large tablespoon honey or agave or 2 tablespoons of brown sugar

Large tablespoon of coconut oil

3 eggs or for a vegan version add another banana & mash it up

1/2 cup chopped walnuts

1 teaspoon baking soda

1 teaspoon vanilla essence

200gm almond meal


Preheat oven to 180C

Mix eggs well, then add liquid ingredients & then remaining ingredients without stirring too much.

Place in oiled lightly with a little coconut oil a loaf pan. 

Decorate with some of the banana cut into slices as shown in picture or however you fancy! Plus the walnuts are great on top too. 

Bake for 40 minutes and allow to cool before removing from pan.  Check it as it cooks, it may need to be covered loosely with tin foil for the last 10 minutes.
