Ingredients

  • 1 punnet strawberries, washed, hulled, halved lengthways
  • 2 tbs balsamic vinegar
  • large handful of  baby spinach leaves
  • 1 avocado cut into chunks
  • 1/2 a cup of your favourite nuts - almonds, walnuts, pinenuts - you choose! 
  • 2 tsp extra virgin olive oil

Method

  1. Place the strawberries & avocado in a bowl. Drizzle with balsamic vinegar and toss gently until well coated.

  2. Step 2

    Place spinach in a large bowl. Drizzle with oil, and toss gently. Divide spinach and strawberries & avocado among serving plates.

  3. Step 3

    Drizzle with the balsamic vinegar remaining in the bowl. Scatter with nuts & serve.
