Minted Peas with Broccoli
- 400g broccoli, cut into florets
- 1 cup peas
- 1/4 cup fresh mint leaves
- 2 teaspoons finely grated lemon rind
- 2 tablespoons lemon juice
- 2 teaspoons extra-virgin olive oil
Cook broccoli & peas for a few minutes (5ish). Drain. Transfer to a large bowl.
- Add mint, lemon rind, lemon juice and oil. Season with salt and pepper. Toss to combine. Serve immediately. Yummo!
