Minted Peas with Broccoli

  • 400g broccoli, cut into florets
  • 1 cup peas
  • 1/4 cup fresh mint leaves
  • 2 teaspoons finely grated lemon rind
  • 2 tablespoons lemon juice
  • 2 teaspoons extra-virgin olive oil


  1. Cook broccoli & peas for a few minutes (5ish). Drain. Transfer to a large bowl.

  2. Add mint, lemon rind, lemon juice and oil. Season with salt and pepper. Toss to combine. Serve immediately. Yummo!
