Boil beetroot for 20 minutes, then slip skins off & slice. Allow to cool.
Combine ingredients except beetroot, make and mix dressing through, now add the beetroot (it stops everything going red!).
In winter this recipe can be served slightly warmed by omitting the rocket & mint.
Warm the dressing in a saucepan with the oranges, then add the beetroot which is still warm from being cooked.
Mix all together
