Ingredients:


1kg potatoes, peeled, roughly chopped
2 tablespoons olive oil
1 lemon - lemon rind & juice
1 tablespoons chopped fresh thyme leaves
1 tablespoons chopped fresh rosemary leaves
Salt & pepper

 

Method:

Preheat oven to 200°C.

Place potato, oil, lemon rind, lemon juice, thyme and rosemary & salt & pepper in a baking dish & toss.

Bake, turning occasionally, for 45mins to an hour or until golden and tender.
