Preheat oven to 200°C. Place bread on a baking tray. Bake in oven for 5 minutes or until golden. Remove from oven.
Heat oil in a non-stick frying pan over medium-high heat. Add onion and cook, stirring, for 5 minutes or until slightly golden. Add sugar. Reduce heat to medium and cook, stirring, for 10 minutes or until onion caramelises. Add the spinach in for the last 30 seconds. Remove from heat.
