Country Pear Tart


Puff Pastry 2 sheets

700gm pears - peeled & cored

1 lemon - juice of

3 tables spoons brown sugar

1 teaspoon cinnamon


Place a pastry sheet in your pie dish & use the second sheet to fill any gaps around the edges, saving the remainder.

Squeeze the lemon over the pears & sprinkle the sugar & half the cinnamon.

Place over the pastry, you can slice the pears and create a lovely circular pattern by laying them out or chop them for a more rustic look.

Place the remaining pastry around the edge of the pie dish covering the first inch or so of the pears around the edge. 

Bake for 40 minutes at 175C, sprinkle with the rest of the cinnamon.  I love it served up with coconut yoghurt :)

Aside from the cooking time, this is a very quick dish to make & there's never any left over!
